made from marasca variety cherry tomatoes from a single estate, grown to maturity in high summer on the coastal plains near Siracusa, in Southern Sicily. The colour and full spectrum rich tomato flavours are preserved using unique indirect vapour heat processing and careful temperature control, which minimises the loss of valuable antioxidants and polyphenol nutrients which are present in the freshly picked organic tomatoes.
